This healthy yet quite easy to prepare recipe is from Puerto Rico as well. The original name of the salad is: “Ensalada de Remolachas con Aderezo de Manzana)
4 tablespoons olive oil
1 tablespoon apple cider vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons crumbled fresh white cheese
2 tablespoons walnuts
Fresh cilantro leaves or parsley to garnish
Pour 1 tablespoon olive oil on the beets, place them on baking sheet and roast for 40-50 minutes in the oven. (180-200 Celcius degrees) Then peel and chop them into small dices.
Whisk sugar, salt, pepper, chopped shallot, and vinegar in a bowl. Slowly drizzle the olive oil while whisking until it is emulsified.
Pour the vinaigrette over beets, stir them together. Garnish with cheese, walnuts, cilantro (or parsley) and serve it.
