300 gr beef (cut into 2-3 cm cubes for stew)
3 cloves of garlic
1-2 green peppers
3 tomatoes (During lockdown, I did not have fresh tomatoes so I had to use canned tomato sauce)
½ cup frozen peas
1,5 cups hot water
Chop onion, garlic and green peppers finely. Peel and slice the carrots in the form of ellipsis.
Chop the artichokes as it is shown in the photos below. Keep them in a bowl full of water with lemon juice.
Heat 4 table spoons olive oil in a large pot, add the beef once the oil is heated.
Add onion, garlic and carrots when the meet gets brown. Sauté them together for 5 minutes, then add black pepper, salt and thyme. Add the grated tomatoes (or tomato sauce)
After cooing them for 2 minutes, add 1,5-2 cups hot water. Then add the artichokes.
Cook it tapped on medium heat for 30-35 minutes.
Add the frozen peas and cook it for another 10 minutes.
Serve it while it is hot.
